VAN DER LINDE – CATERING FOR VEGANS Van der Linde – affectionately known by its customers and the locals in the area as VDL – has quickly become part of Linden’s burgeoning culinary scene and offers diners something distinctive and special. This is particularly true when it comes to their loyal vegan patrons who have a range of specially conceived and designed plant-based dishes from which to choose across different breakfast, lunch and dinner menus. Says Executive Chef Amori Burger: “Plant based eating is becoming more and more popular as it’s not only better for the environment but also, in some cases, healthier too, so I’ve done a small but thought out menu for our vegan patrons. Breakfast options include Chia Vanilla Pudding served with fresh seasonal fruits, dried goji berries and nuts; Falafel Shakshuka (chickpea balls in a spicy tomato sauce) or Tofu Scramble with curried okra and sourdough toast. The lunch menu offers an assortment of mouthwatering dishes such as Free from smoked vegetable terrine and the Chick pea burger with ailoli, chermoula & hand cut chips. Starters on the dinner menu include a Fennel & Apple Salad with harissa and grilled tofu or a Wild Mushroom Soup with truffle oil, served with toasted ciabatta. While from the main nenu, diners can choose from a Charred Vegetable Plate, with a raw carrot and cashew pesto, creamy herb dipping sauce and chimmichurri. For those with a sweet tooth, desserts range from a Pear & Almond Cake, served with vanilla coconut cream to a Sticky Gingerbread with golden syrup honey comb and kumquat preserve yogurt. “We get quite a few non-vegans and vegetarians trying these dishes too,” says Burger Van der Linde also offers vegan and gluten free cakes and desserts from their bakery, either to eat-in, with a cup of tea or coffee, or as a takeaway.
