I love garlic and lots of it! It’s so good for you and imparts so much flavour. When my boys were young and coming down with a cold, our wonderful nanny, Jen (from Jamaica), could get them to eat raw garlic cloves to attack a sickness or make a garlic, ginger and honey tea to sweat those ickies out! I’m sure that I could never get them to do that. And the thing is, they still do this regimen today when they feel like they’re coming down with something!

Garlic is classified as a vegetable and herb and has actually been used medicinally for thousands of years, since ancient Greek and Roman times. Garlic really does fend off bacteria, heart disease, inflammation, high blood pressure, cancer, and type 2 diabetes complications. Years ago, after my dad had a major heart attack, I remember him taking garlic pills! And of course, we all know that garlic is said to fight off evil spirits and keep vampires away.

The anti-bacterial substance in garlic is allicin. Allicin has been shown to protect cells from cancer-causing substances and slow the spread of cancer and is quite powerful as an antibiotic and a potent agent that helps the body to inhibit germ growth and reproduce. It’s said that 1 milligram of allicin has a potency of 15 standard units of penicillin. So you see, Jen was right! Supposedly, if you let your chopped or minced garlic sit for 10 minutes after chopping, it boosts the allicin, a good thing.
