BUTTERNUT SOUP
INGREDIENTS
- 500g Butternut
- 1 white onions
- 20ml oil
- Pinch of salt & pepper
- 750ml water
METHOD
- Add oil to a pot allow to heat up
- Add chopped onions sauté until golden brown
- Peal & Chop butternut into cubes
- Add butternut into a pot with onions then add water & bring to boil
- Take off butternut the heat once its soft
- Season with salt & pepper
- Blend it up with a blender

LAMB SHANK SERVED WITH BUTTERY MASH,SEASONAL VEG & JUS
INGREDIENTS FOR LAMB SHANK & JUS
- 380g Lamb shank
- 2cups Red wine
- 50g Texan spice
- 75g Biltong spice
- 1 Onion
- 1 carrots
- 1 celery stick
- 2 spoons tomato paste
METHOD
- Roughly chop onions, celery and carrots. Place them in a baking tray
- Marinate Lamb shank with the spices
- Slightly grill them in a pan
- In a pan with your onions, add celery and carrots and water, tomato paste, wine and lamb shanks
- Cover with foil and place it into an oven for 4hrs at 180
- Once cooked remove the shank and strain all the jus on a pot
- Let jus simmer then add your brown sauce gravy powder
- Stir until it’s not runny or thick
SEASONAL VEG & MASH
SEASONAL VEG & MASH INGREDIENTS
- 1 Potato
- 300ml Water
- 1 tablespoon butter
- 40g Broccoli
- 40g Cauliflower
- 40g Baby Marrow
- 40g Carrots
METHOD
- Peal and boil potato until it’s soft
- Add butter then mash
- Separate pot blanch all your vegetables
- On a separate pan add teaspoon of butter then sauté all your vegetables
