Shortcake for millionaires
Makes 3 dozen
Ingredients
Base layer
1kg flour
250ml icing sugar
500g Clover Springbok unsalted butter, softened
2.5ml baking powder
Caramel layer
250g Clover Springbok unsalted butter
50ml syrup
2 x 385g tins Clover condensed milk
Chocolate top layer
750g milk chocolate, broken into pieces
Method
Base layer
- Preheat oven to 180°C and grease a 30 x 23cm baking tray.
- Sift flour and add the icing sugar and baking powder. Rub in the butter with your fingertips until the mixture resembles breadcrumbs. Gently mix to form a smooth dough.
- Press the dough into the pan and prick lightly with a fork. Bake for 25-30 minutes until golden brown or until it’s golden in colour.
Caramel layer
Heat the butter, syrup and condensed milk together and mix continuously until the mixture thickens. Remove from the heat immediately. Warning: it burns easily. Pour over the shortbread layer and let it cool down.
Chocolate top layer
Melt the chocolate in a heatproof bowl over lightly simmering water. Remove from heat and stir until smooth. Pour over the caramel and let it set. Once set, immediately cut into squares or bars.
